Or “zucchini” if you’re American. Great for if you want to serve a vegetable side dish without serving plain vegetables.
2-3 courgettes
1/2 tsp dried thyme
1/2 tsp dried basil
A few drops of lemon juice
Black pepper to taste
Slice the courgettes and place in a steamer (or in a saucepan with a small amount of water). Sprinkle the herbs, lemon juice and pepper onto the slices and steam until softened but not soggy.
