Warm avocado halves with red onion, tomato and basil

Serves 4

2 ripe avocados
1 tomato
1 red onion
1 tsp balsamic vinegar
ground black pepper
a few basil leaves (or dried basil will do)
olive oil for frying

Preheat the grill. Finely chop the red onion and fry gently in a little olive oil with the balsamic vinegar until softened. Add a small amount of ground black pepper.

Chop the avocados in half and remove the stones. Place the red onion in the hole left by the stone. Cut the tomato into eight segments and place two segments onto each avocado half. Place the avocado halves under the grill for a couple of minutes until the avocados and tomatoes are warm and slightly softened. Tear the basil leaves and sprinkle over the avocados. Serve warm.


From an early age Rick would rather pick up a carrot than a sausage. Not a vegetarian, but would like people to think he was.
