This really quick and easy sauce can be used in a wide variety of ways – as pasta sauce, lasagna ingredient, pizza topping, with vegetables wrapped in pastry…
Just add tagliatelle, mushrooms, courgettes and tofu or beans for a simple but very tasty main meal.
1 tin chopped tomatoes
1/2 tsp salt and pepper
1 tsp sugar
2 tsp balsamic vinegar or 4-5 tbsp vegan red wine
1 tbsp olive oil
1 clove garlic (optional)
1 tsp dried basil or dried mixed herbs (optional)
Add all the ingredients to a pan and simmer for 15-30 minutes. Use as required.
