Serves 3-4 as a starter with bread
300g whole mushrooms (e.g. chestnut, button or mini portobello)
100ml olive oil
2 tbsp red wine vinegar
1 tsp dried thyme
1 tsp lemon juice
2 cloves garlic, peeled and sliced
salt and pepper to taste
Combine all the ingredients in a saucepan, mixing well. Heat until the oil begins to sizzle, then cover and cook over a low heat for around 10 minutes.
This dish can be served warm as a starter with fresh bread, or warm or cold as a buffet or potluck dish.
